Lemon Garlic Chicken in Browned Butter

Looking for a quick, easy dinner idea? We’ve got you covered! This chicken dish has a TON of flavor and can be tailored in all sorts of ways, but here is our favorite - a garlicky kick combined with the rich, toasty taste of browned butter and a bright squeeze of fresh lemon. And since this dish finishes off in the oven, it gives you time to throw together a quick salad, rice, or other sides to round out the meal.



Ingredients:

  • 2-3 lbs bone-in mixed chicken (thighs, legs, wings, or a mix)*

  • 1-2 tbsp olive oil

  • 2 tbsp butter

  • 1-2 tbsp Royal Roost Farm Garlic Pepper Sage Artisan Seasoning Blend

  • 1 lemon, halved

  • 6 cloves garlic (optional)

  • Parsley and lemon slices for garnish (optional)

Directions:

  1. Preheat oven to 350 degrees.

  2. Cover bottom of oven-proof skillet with olive oil and heat over medium heat.

  3. Rinse chicken and pat dry. Dust both sides with Garlic Pepper Sage seasoning blend.

  4. When skillet is hot, add chicken and sear until it is golden-brown (about 5 minutes).

  5. Turn chicken and add butter. Sear 5 more minutes or until golden.

  6. Spoon browned butter over chicken, add garlic cloves to pan (optional).

  7. Place in preheated oven 18-20 minutes or until done.

  8. Squeeze juice of 1 lemon over chicken. Garnish with lemon slices and parsley, if desired.


A few notes:

  • This chicken is GREAT served over toasted orzo or rice topped with the browned butter sauce and roasted garlic.

  • Drizzle the remaining pan drippings over steamed veggies.

  • Smash the garlic cloves on slices of good, crusty bread and mop up the pan sauce.

  • Cooking time may need to be adjusted depending on the amount of chicken you use. If using less, check after 15 minutes. If using chicken breast, cooking time will need to be increased.

  • Debone leftover chicken and toss in salads, wraps, or pasta. Makes a great chicken salad, too!
